2 cups cooked pork loin roast, cubed *
8 ounces linguine, OR other favorite pasta
1 small onion, chopped
1 tablespoon olive oil
1 8-oz package sliced mushrooms
1 1/4 cups Alfredo sauce, (purchased)
Parmesan cheese, for garnish

Cooking Directions:

Cook pasta in boiling salted water according to package directions.

In the meantime, sauté chopped onion in a large skillet over medium-high heat with oil until beginning to soften. Add sliced mushrooms and sauté until tender. Stir in Alfredo sauce and bring the mixture to a simmer. Stir in cubed pork roast and just heat through.

Drain the cooked pasta and toss in the pork mixture. Sprinkle the dish generously with Parmesan and serve. 

Serves 4

Loin roast is sometimes confused with tenderloin. Despite the name similarity, they are not one in the same. A loin roast is typically sold in pieces weighing between 2 to 4 pounds (the tenderloin is a smaller, long cut that usually weighs about a pound). The term roast simply refers to a large cut of pork.

COOKING BASICS:
1. Coat meat lightly with seasoned flour, if desired.
2. In a large, heavy pan with lid, brown meat on all sides in a small amount of oil; remove excess drippings from pan.
3. Cover meat with desired liquid(s).
4. Cover pan and simmer over low heat on stove or in a low to moderate (275 to 300 degrees F.) oven for 1 to 3 hours, until tender.
5. If adding vegetables, add toward end of cooking time, during the last 20 to 45 minutes.
