A Few Good Knives

When preparing meat, a high-quality boning knife and utility knife are important tools. A boning knife, which has a narrow blade that curves inward at the cutting edge, is helpful for removing bones from meat. A hollow-ground utility knife will be invaluable for smooth, thin-slicing of meat. Be sure to sharpen all knives regularly for ease of use and safety.
